My family has been loving this Cherry Tomato, Garlic, and Basil Baked Salmon in Foil recipe lately.
It’s a simple recipe where salmon fillets are seasoned with fresh garlic, cherry tomatoes, lemon juice, and basil leaves.
They are then cooked in their own foil packets, which lets all the seasonings just melt together and enhance the salmon. Naturally Paleo, Grain-free, Whole30 and dairy-free.
Seriously, cooked cherry tomatoes are the best! They soften and become rich yet sweet. Drool.

My toddler loves this recipe, so I make it often.
We have a hard time getting her to eat meat, but she’ll gobble up salmon, so I’ve been experimenting with new and different ways to make it.
I was grilling it on a pan for a while, but my pregnant self didn’t want to eat it that way anymore.
So the next idea was to bake it and we just love it!

You can easily adapt this recipe to your tastes.
Fresh oregano or thyme would taste great. So would some fresh onions!
But I would stick with cherry tomatoes over regular tomatoes… they just have the best flavor!
I’ve also made this with much more salmon; I just add more garlic and tomatoes to my shopping list.
How to make it
You’ll make this Cherry Tomato, Garlic, and Basil Baked Salmon in Foil recipe in an assembly line style.
To do this, take out 4 pieces of foil and lay them out in a row.
Then sprinkle the middle of each piece of foil with olive oil. Top each piece of foil with a salmon fillet.
Then, add some chopped garlic, salt and pepper, lemon juice and basil leaves on top of each salmon fillet.
Lastly, add 5 sliced cherry tomatoes to each piece of foil. I try to have some of the tomatoes on top of the fish and some along the sides.
Then, you fold up each side side of the foil upwards until the whole salmon is covered in foil.
Bake for 15-20 minutes, open the foil, then broil for 2 minutes.
Also, you can skip the broiling step if you don’t want to do it, the fish should be cooked. It’s more to add some crisp at the end.
Cherry Tomato, Garlic, and Basil Baked Salmon in Foil
1.5-2 lbs salmon fillets, (4 fillets salmon fillets )
4-5 cloves garlic, chopped
20 cherry tomatoes, (5 per fillet), sliced in half
8 large leaves of fresh basil
Preheat oven to 400 degrees F.
Take out 4 pieces of foil and lay them out in a row. Sprinkle some olive oil in the center of each piece of foil, then put one salmon fillet on top of it, skin down.
Top each salmon fillet with some of the chopped garlic ( divide it evenly). Sprinkle some salt and pepper on top of each fillet as well.
Then top each salmon fillet with 2 large leaves of basil, 5 sliced cherry tomatoes, and a sprinkle of lemon juice. Fold up each side of the foil up to cover the top of the salmon until it is completely wrapped up.
Cook the salmon for 15- 20 mins, until cooked through. ( Cook time will depend on the size/thickness of fish).
Then, open up the top of each foil packet and broil the top of the fish for 2 minutes.
